Happy Holidays form the OCSC Women’s Auxiliary. We hope you are all doing well. In the past this would have been the time when we were busy preparing for the annual Kiddie’s Christmas party. But that was then and a lot has changed. For the Club, we are donating an item to the Friends of OCSC Mystery Safe Raffle. We still wanted to do something for our community so this year we are donating money, candy and toys to a Women’s Emergency shelter and non-chocolate candy to the Desert Angels. This wouldn’t be possible if it wasn’t for you, the members of OCSC. When you buy our cakes and pies at the monthly meetings, you make it possible for us to share and support others. We couldn’t do it without you and thank you very much. To show our appreciation, here are some 2-ingredient recipes for you to make and enjoy. Surprise your family and make some. Show them how it’s done.
Banana Oatmeal Cookies
Preheat the oven to 350 degrees.
Take and mash 2 large overripe bananas, peeled.
Add to the bowl 1 cup of quick or old-fashioned oats. Do not use rolled oats.
Mix the oats with the bananas really well and set them aside for 10 minutes for the oats to absorb some of the banana’s moisture.
Spoon out a tablespoon at a time and roll them into balls, placing them on a greased cookie sheet.
Bake for 10 to 15 minutes, depending on how crunchy you like your cookies.
Remove from the oven and let them cool before taking them off the cookie sheet.
These are gluten-free. You can get creative and add all kinds of things to these cookies. Nuts, dried fruit, M & M’s, etc.
No-Bake, Gluten-free Brownies
Mix 7 tablespoons of pure Michigan Maple Syrup with one cup of unsweetened, Dutch processed cocoa powder.
Mix well, roll into balls and then chill.
The balls will have a fudge like texture and a bittersweet taste.
These can be rolled in crush nuts if desired.
Oreo Cheesecake Balls
Crush to smithereens the contents of one bag of Oreos (chocolate or vanilla).
Add in one 8-ounce bar of warm, softened cream cheese.
Mix really well.
These can be spread into a 9 x 9-inch greased pan to serve as bars, or rolled into balls.
These can also be rolled in nuts, or dipped in decorator’s chocolate.
Cool Whip and Cake Cookies!
Preheat oven to 350 degrees.
Mix 1 box Funfetti cake mix (or any other flavor you favor) with a 10-ounce tub of thawed Cool Whip.
Spoon mix onto a greased cookie sheet and bake for 10 minutes.
The cookies should be golden around the edges.
Let them cool, remove them from the cookie sheet and Enjoy!
They will be light and cakey, different than a crispy cookie. Frosting and decorating them would be fun, too.
